“I think the most important thing is the food, and we have delicious food. You have to have good food or people won’t come back. When we took ownership in 1996, business was very slow. But we’ve turned things around and gone back to the basics. We make everything from scratch-from stocks and sauces down to the smallest detail, like croutons for the Caesar salad. It’s a traditional way to do things, and it sets us apart. There are few restaurants that take the time or money to do it right, but we do.”
